Brokkoli-Schinken-Pasta Für ca. 3 Portionen Zutaten * 250–300 g Pasta * 400 ml Sahne * 200 ml Wasser * 2 EL Rinderbrühe * 100 g Schinken, klein geschnitten * ½ rote Zwiebel, klein geschnitten * ½ Brokkoli, in kleine Röschen geteilt * 60 g Parmesan, gerieben * 60 g geriebener Käse (hier: Emmentaler) * 3–4 gehäufte EL Mehl * 1 Eigelb * Paprikapulver * Salz * Pfeffer Zubereitung 1. Fertig! 🥦 Broccoli & Ham Pasta Makes about 3 servings Ingredients * 250–300 g pasta * 400 ml heavy cream * 200 ml water * 2 tbsp beef stock * 100 g ham, finely chopped * ½ red onion, finely chopped * ½ broccoli, cut into small florets * 60 g Parmesan, grated * 60 g grated cheese (here: Emmental) * 3–4 heaped tbsp flour * 1 egg yolk * Paprika powder * Salt * Pepper Instructions 1. Cook the pasta in salted water until it is almost cooked through. Drain and set aside. Reserve some of the pasta water. 2. Fry the ham and red onion in a large pan. 3. Sprinkle the flour over the top and cook briefly. 4. Pour in the heavy cream and water and stir everything well. 5. Add the beef stock, paprika powder, salt and pepper and stir everything well. The sauce should already have thickened slightly at this point. 6. Add the Parmesan and grated cheese and stir well. 7. Add the uncooked broccoli directly to the sauce. If the sauce is too thick, gradually add some of the reserved pasta water. 8. Let the sauce and broccoli gently simmer over low heat for about 20 minutes. This will cook the broccoli. If you prefer it especially soft, you can cook it separately beforehand. 9. In a separate bowl, whisk the egg yolk. Add a small splash of the hot sauce and immediately stir well. 10. Turn the heat to low and add the egg yolk mixture to the sauce while stirring constantly. 11. Let everything gently simmer for another 4–5 minutes. The sauce should now be nice and creamy. Season again with salt, pepper and paprika powder if needed. 12. Add the cooked pasta to the sauce and mix everything well. Then let the pasta sit in the sauce for another 5 minutes over low heat so it can absorb the creamy sauce and become completely soft and cooked through. Done! 🥦 #pasta #cheese #broccoli #goviral #fy
