It’s finally soup season 🍅 Beef & Tomato Soup You’ll need: • 1½–2 lb stewing beef (even better with fattier or bone-in cuts like oxtail, short ribs, beef shank or chuck) • 1 large onion • garlic • 2 carrots • 2 celery stalks • 2 ripe tomatoes • 1 (28 oz) can whole tomatoes • ½ large green cabbage • salt + black pepper, to taste • olive oil Method: Season the beef generously with salt. Heat a drizzle of olive oil in a large pot and sear until browned, then remove. Add the onion, garlic, carrots, celery, fresh tomatoes and canned tomatoes. Add the cabbage, then place the browned beef on top. Season with salt and black pepper. Cover and cook on low for 2–3 hours, until the beef is tender and the vegetables have cooked down into a rich tomato broth. Optional: add potatoes once everything has cooked down and cook for another 20–30 minutes, until fork tender. You can also serve with rice. #homecooking #easyrecipes #healthyrecipes #cabbage #tomatosoup
